Had been meaning to make the short trip to WD~50 for a while and finally made it last night. It did not disappoint. The flavors were clean and unique.
Dinner started with an appetizer sampling of the following:
Lychee-buttermilk soup, chicken confit, smoked asparagus
Sweetbreads, peanut, beet-pomegranate, pickled sweet potato
Corned duck, rye crisp, purple mustard, horseradish cream
Octopus, watermelon, fried ricotta, curry
Foie gras, fennel, malt, sherry vinegar jam
Smoked eel, salsify, guava, puffed yuzu
Next were the main courses, made up of:
turbot, barbecued lentils, cauliflower, dried apricot
Duck breast, spaghetti squash, almond polenta, pomelo molasses
And then dessert of:
Pistachio ice cream, pineapple, pandan
Grapefruit curd, pine nut, meringue, nastirtium ice cream
Warm gianduja, ice milk, hazelnut, fennel

2007 was good and 2008 has been sweet too
To build a collection requires a certain type of cruelty of focus. Without this, you end up with a mere accumulation. A collection must have some sort of theme that runs through it which informs the choices made. With my collection still in the early stages I continue to develop theme. The very broad (and too broad) concept continues to be hand built mountain bikes up to around 1992. More than that though, I have narrowed the builders represented.
